Story
Callum, Laura and Reynold were told by the judges that they could cook whatever they liked and could decide on the cook time together as well. After mutually settling on 2 hours each, the contestants began their dishes. Laura created 2 ocean-themed snacks comprising of a squid ink meringue pebble with oyster emulsion and a saltbush cracker with crab and caviar. Callum chose to use native Australian flavours to create a chicken liver parfait with Davidson plum gel, onion puree, leeks and crackers. Reynold was inspired by Harry Potter and decided to recreate his dish "The Snitch" consisting of a tonka bean caramel within a brown butter mousse which was coated with chocolate and garnished with a honey tuile and ganache. The Snitch was also served with a pear and yuzu sorbet and a yoghurt snow.
